Château Canon La Gaffelière is located just south of the village of Saint-Emilion. One part of the 20 hectare vineyard is located on the appellation's famous clay-limestone slope, while the other part, closer to the Dordogne, is on sandy soil perfect for Cabernet Franc.
Since he took over management in the 1990s, Stephan von Neipperg has been deeply committed to improving quality, which was far from realizing its full potential at the time. The arrival of Stéphane Derenoncourt in 1997 further helped to restore the estate's luster. He introduced viticultural techniques more respectful of the terroir as well as hand picking into small crates, rigorous sorting, soft extraction including pigeage (punching down the cap), and malolactic fermentation in barrel on the lees. He also introduced microbullage, or micro-oxygenation, a method that softens the tannin. Racking is kept to a strict minimum during aging.
Canon la Gaffelière produces full-bodied, elegant wines.
Canon la Gaffelière has become more full-bodied since the excellent 1996 vintage. Recent vintages of Château Canon la Gaffelière are remarkable and very promissing, closer in quality to a Premier Grand Cru Classé.

Fresh, fruity nose of blueberry, tobacco, vanilla, and a hint of smoke.
After a few minutes in the glass, the wine gains sweetness and reveals faint barnyard notes, a tight texture, soft tannin, and a slightly acidic taste. It has ripe fruit and a wonderful long finish.
Overall, this wine is enjoyable, although its rustic character may not be to everyone’s taste.
