Château Chauvin is located on the north-west part of the Saint-Emilion's plateau, close to Château Cheval-Blanc.
The estate's terroir consists of a gentle slope with sandy soil and a clay-iron pan subsoil.
The Ondet sisters implemented integrated pest control at Château Chauvin starting in the 90s. In 1998, a neighboring 2.3 hectare plot - Vieux Château Chauvin (Grand Cru) - was bought and added to the estate in 1999. This increased the vineyard size to 15 hectares, a fairly respectable size for the Right Bank.
At harvest time, the grapes are mechanically sorted on a vibrating sorting table, and then a second time by hand on a conveyor belt.
After fermentation in vat, part of the wine is aged on the lees.
Microbullage, or micro-oxygenation can also be used, depending on the vintage. The wine is not filtered.
After a few ups and downs in the late 90s and early 2000s, Château Chauvin perfectly succeeded in more recent years, which are finer and more complex than previous vintages.
Château Chauvin is an estate to follow.
